La Torre del Canónigo is a small luxury hotel in the heart of Dalt Vila, the historic centre of Ibiza Town declared a World Heritage Site by UNESCO. Surrounded by the old Renaissance walls that form part of the ancient Roman acropolis, it is a dream for lovers of medieval architecture, Phoenician archaeology and labyrinthine stepped alleys. Its 26 rooms, with a contemporary Mediterranean atmosphere and views of the bay and the port, are spread across three historic buildings linked by the pool terrace and the medieval streets. The main tower dates from the 10th century and keeps secret passages and the emblematic Ibizan aqueduct, visible from the hall, while a 16th-century Jesuit convent houses a chapel now converted into a pool and chill-out area. The restaurant, designed by Lázaro Rosa-Violán, has a terrace with sea views, and the hotel offers wellness treatments and its own Pershing 54 yacht for trips to Ibiza and Formentera. It is a quiet getaway from the hustle and bustle, with first-class cuisine.
